Chia Pudding:
-½ cup water
-2 t loose chai tea or 2 tea bags
-1 cup almond milk
-1 ½ t raw honey
-½ t vanilla extract
-1/3 c chia seeds

For serving:
-Yogurt
-Blackberries
-1-2 drops Thieves Vitality oil

Choc-Nut Crunch Topping:
-2 T coarsely chopped nuts, your choice
-2 T flaked unsweetened coconut
-2 T steel cut oats, uncooked
-1 T cacao nibs
-2 t cacao powder
-2 t raw honey
-1 t coconut oil, warmed
-pinch of Himalayan salt

Preheat oven to 400 degrees

Pudding:
Simmer the water and chai tea in a saucepan for 5 minutes. Add almond milk, honey and vanilla, bring back to a simmer. Set aside to infuse for 10 minutes.

Prepare Choc-Nut Crunch:
Combine all ingredients and mix well to combine. Spread onto baking tray. Bake for 5 minutes, stirring occasionally, or until brown. Set aside

Assemble Pudding Cups:
Strain the Chai tea infused milk. Add chia seeds and stir to combine. Set aside for 10-15 minutes, stirring occasionally until seeds swell and absorb all the liquid to make a thick pudding. To serve, spoon chia pudding into bowl, stir in 1-2 drops of Thieves Vitality essential oil. Top with yogurt, blackberries and choc-nut crunch. Enjoy!
