Einkorn Granola

This is my favorite granola recipes. I love to just eat it as a snack! It’s super easy to make, just mix it all up and bake for a bit. Good food, good taste, good day! Yay!

INGREDIENTS

  • 3-1/2 C Rolled Oats
  • 1/2 C Einkorn Flour
  • 1 C Raw Sliced Almonds
  • 1 C Raw Cashew pieces May substitute Walnuts or pecans
  • 1 C Unsweetened Shredded Coconut
  • 1/2 C Raw Sunflower Seeds
  • 2 tsp Ground Cinnamon
  • 1-1/2 tsp Ground Ginger
  • 1/2 tsp Grated or Ground Nutmeg
  • 6 Tbs Unsalted Butter or Coconut oil
  • 1/2 C Honey
  • 2 Drops Each of cinnamon bark, nutmeg & clove essential oils
  • 1/3 C Wolf Berries (Gogi Berries)
  • 1/3 C Dried Cranberries
  • 2 tsp Vanilla Extract
  • 1/2 tsp Salt
  • Parchment Paper

INSTRUCTIONS

Preheat the oven to 250 degrees. Cover a rectangular baking sheet with parchment paper.

Mix the dry oats, almonds, cashews, coconut, seeds and spices together in a large mixing bowl.

Heat the butter and honey together in a small saucepan over low heat. Once the butter melts stir in the vanilla, essential oils and salt.

Pour the hot liquids over the dry ingredients and stir together with a rubber spatula until evenly coated.

Spread mixture onto prepared pan in one even layer. Bake for 75 minutes.

The granola will become crisp as it cools at which point you can break it up into small chunks by pounding it in a zip lock bag. Store in air tight container at room temperature for up to 2 weeks
